Nasi Kerabu Fusion

Ingredients

  • 2 cups of cooked rice
  • 1 cup of shredded purple cabbage

  • 1/4 cup of chopped cilantro

  • 1/4 cup of dried shrimp, finely chopped
  • 2 tablespoons of fish sauce
  • 2 tablespoons of lime juice
  • 2 tablespoons of palm sugar
  • 1 tablespoon of tamarind paste

Instructions

  1. In a large bowl, mix the cooked rice, purple cabbage, carrot, long beans, shredded coconut, cilantro, mint leaves, and Thai basil.
  2. In a small bowl, mix the fish sauce, lime juice, palm sugar, and tamarind paste to make the dressing.
  3. Pour the dressing over the rice mixture and toss to combine.
  4. Divide the Nasi Kerabu Fusion into serving bowls and top with fried shallots, crushed peanuts, and dried shrimp.
