Ingredients

  • 2 cups jasmine rice
  • 1 3/4 cups water
  • 1 cup coconut milk
  • 1 tsp ground turmeric
  • 1 pandan leaf, tied in a knot
  • 1/2 tsp salt

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a pot, combine the rice, water, coconut milk, ground turmeric, pandan leaf, and salt.
  3. Bring the mixture to a boil over medium heat, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  4. Remove the pot from the heat and let it sit, covered, for 5 minutes.
  5. Fluff the rice with a fork and remove the pandan leaf before serving.
