Ingredients
- 2 cups jasmine rice
- 1 3/4 cups coconut milk
- 2 pandan leaves, tied into a knot
- 1 teaspoon salt
- 4 hard-boiled eggs, halved
- 1 cucumber, sliced
- 1 cup fried anchovies
- 1 cup roasted peanuts
- Sambal (chili paste), for serving
Instructions
- Rinse the jasmine rice until the water runs clear, then drain.
- In a pot, combine the rice, coconut milk, pandan leaves, and salt. Cook over medium heat until the coconut milk is absorbed and the rice is cooked.
- Serve the coconut rice with hard-boiled eggs, sliced cucumber, fried anchovies, roasted peanuts, and sambal.
