Ingredients

  • 2 cups jasmine rice
  • 1 3/4 cups coconut milk
  • 2 pandan leaves, tied into a knot
  • 1 teaspoon salt
  • 4 hard-boiled eggs, halved
  • 1 cucumber, sliced
  • 1 cup fried anchovies
  • 1 cup roasted peanuts
  • Sambal (chili paste), for serving

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a pot, combine the rice, coconut milk, pandan leaves, and salt. Cook over medium heat until the coconut milk is absorbed and the rice is cooked.
  3. Serve the coconut rice with hard-boiled eggs, sliced cucumber, fried anchovies, roasted peanuts, and sambal.
