Nasi Lemak (coconut Milk Rice)

Ingredients

  • 2 cups jasmine rice
  • 1 3/4 cups coconut milk
  • 1 pandan leaf, tied in a knot
  • 1 teaspoon salt
  • 4 hard-boiled eggs, halved
  • 1 cucumber, sliced
  • 1 cup fried anchovies
  • 1 cup roasted peanuts
  • Sambal (chili paste), for serving

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice, coconut milk, pandan leaf, and salt. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  4. Fluff the rice with a fork and discard the pandan leaf.
  5. Serve the coconut milk rice with hard-boiled eggs, sliced cucumber, fried anchovies, roasted peanuts, and sambal.
