Nasi Lemak (coconut Rice With Prawns)

Ingredients
- 2 cups jasmine rice
- 1 3/4 cups coconut milk
- 1 cup water
- 1 teaspoon salt
- 1 pound large prawns, peeled and deveined
- 3 tablespoons vegetable oil
- 1 cucumber, sliced
- 4 hard-boiled eggs, halved
- 1 cup roasted peanuts
- 1 cup sambal (spicy chili paste)
Instructions
- In a pot, combine the jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, heat the vegetable oil in a pan over medium heat. Add the prawns and cook for 2-3 minutes on each side until they turn pink and opaque.
- Once the rice is ready, fluff it with a fork and serve with the cooked prawns, sliced cucumber, hard-boiled eggs, roasted peanuts, and sambal.
