Ingredients

  • 2 cups jasmine rice
  • 1 3/4 cups coconut milk
  • 1 cup water
  • 1 teaspoon salt
  • 1 pound large prawns, peeled and deveined
  • 3 tablespoons vegetable oil
  • 1 cucumber, sliced
  • 4 hard-boiled eggs, halved
  • 1 cup roasted peanuts
  • 1 cup sambal (spicy chili paste)

Instructions

  1. In a pot, combine the jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  2. While the rice is cooking, heat the vegetable oil in a pan over medium heat. Add the prawns and cook for 2-3 minutes on each side until they turn pink and opaque.
  3. Once the rice is ready, fluff it with a fork and serve with the cooked prawns, sliced cucumber, hard-boiled eggs, roasted peanuts, and sambal.
