Ingredients

  • 2 cups jasmine rice
  • 1 3/4 cups coconut milk
  • 2 pandan leaves, tied into a knot
  • 1 tsp salt
  • 4 eggs, hard-boiled and halved
  • 1 cucumber, sliced
  • 1 cup fried anchovies
  • 1 cup roasted peanuts
  • Sambal (chili paste), to taste

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a pot, combine the rice, coconut milk, pandan leaves, and salt. Cook the rice according to your preferred method (stovetop or rice cooker).
  3. Once the rice is cooked, fluff it with a fork and remove the pandan leaves.
  4. Divide the rice into 4 servings and top each with a halved hard-boiled egg, sliced cucumber, fried anchovies, roasted peanuts, and sambal.
