Ingredients

  • 2 cups jasmine rice
  • 1 3/4 cups coconut milk
  • 3 pandan leaves, tied into a knot
  • 1 lemongrass stalk, bruised
  • 1 inch ginger, sliced
  • 1 tsp salt
  • 4 hard-boiled eggs, halved
  • 1 cucumber, sliced
  • 1 cup fried anchovies
  • 1 cup roasted peanuts
  • Sambal (chili paste), for serving

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a pot, combine the rice, coconut milk, pandan leaves, lemongrass, ginger, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  3. Fluff the rice with a fork and discard the pandan leaves, lemongrass, and ginger slices.
  4. Serve the coconut rice with hard-boiled eggs, sliced cucumber, fried anchovies, roasted peanuts, and sambal.
