Nasi Lemak (fragrant Coconut Rice)
Nasi Lemak, a popular Malaysian dish, is a fragrant coconut rice dish that is often served with a variety of accompaniments.
Ingredients
- 2 cups jasmine rice
- 1 3/4 cups coconut milk
- 3 pandan leaves, tied into a knot
- 1 lemongrass stalk, bruised
- 1 inch ginger, sliced
- 1 tsp salt
- 4 hard-boiled eggs, halved
- 1 cucumber, sliced
- 1 cup fried anchovies
- 1 cup roasted peanuts
- Sambal (chili paste), for serving
Instructions
- Rinse the jasmine rice until the water runs clear, then drain.
- In a pot, combine the rice, coconut milk, pandan leaves, lemongrass, ginger, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and discard the pandan leaves, lemongrass, and ginger slices.
- Serve the coconut rice with hard-boiled eggs, sliced cucumber, fried anchovies, roasted peanuts, and sambal.
