Ingredients

  • 2 cups jasmine rice
  • 400ml coconut milk
  • 2 cups water
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1 lemongrass stalk, bruised
  • 1 tsp salt
  • 1/2 tsp sugar
  • 4 chicken thighs, cooked and shredded
  • 4 hard-boiled eggs
  • 4 cups spinach, blanched

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a large pot, combine the rice, coconut milk, water, shallots, garlic, bay leaves, lemongrass, salt, and sugar.
  3. Cook over medium heat, stirring occasionally, until the rice is tender and the liquid is absorbed, about 20-25 minutes.
  4. Divide the cooked rice into 4 serving bowls and top each with shredded chicken, hard-boiled egg, and blanched spinach.
