Nasi Liwet Love

Ingredients
- 2 cups jasmine rice
- 400ml coconut milk
- 2 cups water
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 2 bay leaves
- 1 lemongrass stalk, bruised
- 1 tsp salt
- 1/2 tsp sugar
- 4 chicken thighs, cooked and shredded
- 4 hard-boiled eggs
- 4 cups spinach, blanched
Instructions
- Rinse the jasmine rice until the water runs clear, then drain.
- In a large pot, combine the rice, coconut milk, water, shallots, garlic, bay leaves, lemongrass, salt, and sugar.
- Cook over medium heat, stirring occasionally, until the rice is tender and the liquid is absorbed, about 20-25 minutes.
- Divide the cooked rice into 4 serving bowls and top each with shredded chicken, hard-boiled egg, and blanched spinach.
