Ingredients

  • 2 cups basmati rice
  • 4 chicken thighs
  • 1 onion, sliced
  • 4 cloves garlic, minced

  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • Salt to taste
  • 4 cups chicken broth
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • Fresh cilantro for garnish

Instructions

  1. Rinse the basmati rice until the water runs clear, then soak in water for 30 minutes.
  2. In a large pot, brown the chicken thighs on all sides. Remove and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Add the spices and salt, stirring for 1-2 minutes until fragrant.
  5. Return the chicken to the pot and add the soaked rice, chicken broth, raisins, and almonds.
  6. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
