Ingredients
- 2 cups basmati rice
- 4 chicken thighs
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- Salt to taste
- 4 cups chicken broth
- 1/4 cup raisins
- 1/4 cup slivered almonds
- Fresh cilantro for garnish
Instructions
- Rinse the basmati rice until the water runs clear, then soak in water for 30 minutes.
- In a large pot, brown the chicken thighs on all sides. Remove and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add the spices and salt, stirring for 1-2 minutes until fragrant.
- Return the chicken to the pot and add the soaked rice, chicken broth, raisins, and almonds.
- Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
