Ingredients

  • 2 cups of steamed rice
  • 1 cup of fresh bean sprouts
  • 1 cup of water spinach (kangkung)
  • 1 cup of long beans, cut into 2-inch pieces
  • 1 block of tempeh, sliced into thin strips
  • 1 cup of peanut butter
  • 3 cloves of garlic, minced
  • 2 red chilies, chopped
  • 1 tablespoon of tamarind paste
  • 1 tablespoon of palm sugar
  • 1 teaspoon of salt
  • 4 cups of water

Instructions

  1. In a saucepan, combine the peanut butter, garlic, red chilies, tamarind paste, palm sugar, salt, and water. Cook over medium heat, stirring constantly, until the sauce thickens. Set aside.
  2. In a separate pan, fry the tempeh until golden and crispy. Remove from the pan and set aside.
  3. Blanch the bean sprouts, water spinach, and long beans in boiling water for 1-2 minutes. Drain and set aside.
  4. To serve, place a portion of steamed rice on a plate, arrange the blanched vegetables and fried tempeh on top, and drizzle with the peanut sauce.
