Nasi Tomato (fragrant Tomato Rice)
Nasi Tomato, or Fragrant Tomato Rice, is a popular dish in Malaysian Indian cuisine. It is a flavorful and aromatic rice dish that is perfect for serving with a variety of curries and side dishes.
Ingredients
- 2 cups of basmati rice
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 cinnamon stick
- 3 cardamom pods
- 3 cloves
- 1 teaspoon of cumin seeds
- 1 teaspoon of turmeric powder
- 2 cups of water
- Salt to taste
- 2 tablespoons of vegetable oil
Instructions
- Rinse the rice until the water runs clear, then soak the rice in water for 30 minutes. Drain and set aside.
- Heat the vegetable oil in a large pot over medium heat. Add the cinnamon stick, cardamom pods, cloves, and cumin seeds. Sauté for 1-2 minutes until fragrant.
- Add the chopped onion, garlic, and ginger. Sauté until the onions are soft and translucent.
- Stir in the turmeric powder and tomato puree. Cook for 3-4 minutes until the oil separates from the mixture.
- Add the drained rice to the pot and stir to coat the rice with the tomato mixture.
- Pour in the water and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork before serving.
