Nasi Tomato (fragrant Tomato Rice)

Ingredients

  • 2 cups of basmati rice
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 cinnamon stick
  • 3 cardamom pods
  • 3 cloves
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of turmeric powder
  • 2 cups of water
  • Salt to taste
  • 2 tablespoons of vegetable oil

Instructions

  1. Rinse the rice until the water runs clear, then soak the rice in water for 30 minutes. Drain and set aside.
  2. Heat the vegetable oil in a large pot over medium heat. Add the cinnamon stick, cardamom pods, cloves, and cumin seeds. Sauté for 1-2 minutes until fragrant.
  3. Add the chopped onion, garlic, and ginger. Sauté until the onions are soft and translucent.
  4. Stir in the turmeric powder and tomato puree. Cook for 3-4 minutes until the oil separates from the mixture.
  5. Add the drained rice to the pot and stir to coat the rice with the tomato mixture.
  6. Pour in the water and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  7. Fluff the rice with a fork before serving.
