Ingredients
- 2 cups jasmine rice
- 1 3/4 cups coconut milk
- 1 cup water

- 1/2 teaspoon sugar
- 1 cup dried anchovies
- 4 shallots, thinly sliced
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 2 tablespoons tamarind juice
- 2 tablespoons vegetable oil
Instructions
- Rinse the jasmine rice until the water runs clear, then drain.
- In a pot, combine the rinsed rice, coconut milk, water, salt, and sugar. Cook the rice until it's fluffy and fully cooked.
- While the rice is cooking, heat the vegetable oil in a pan over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Add the dried anchovies to the pan and stir-fry until they are crispy.
- Pour in the tamarind juice and continue to cook until the anchovies are well-coated and aromatic.
- Once the rice is cooked, fluff it with a fork and transfer it to a serving platter. Serve the spicy anchovies on top of the coconut rice.
