Ingredients

  • 1 3/4 cups coconut milk
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 cup dried anchovies
  • 4 shallots, thinly sliced
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 2 tablespoons tamarind juice
  • 2 tablespoons vegetable oil

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice, coconut milk, water, salt, and sugar. Cook the rice until it's fluffy and fully cooked.
  3. While the rice is cooking, heat the vegetable oil in a pan over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  4. Add the dried anchovies to the pan and stir-fry until they are crispy.
  5. Pour in the tamarind juice and continue to cook until the anchovies are well-coated and aromatic.
  6. Once the rice is cooked, fluff it with a fork and transfer it to a serving platter. Serve the spicy anchovies on top of the coconut rice.
