Ingredients

  • 2 large eggplants, thinly sliced lengthwise
  • 1/4 cup white miso paste
  • 2 tablespoons mirin
  • 2 tablespoons sake
  • 1 tablespoon sugar
  • 1 tablespoon vegetable oil
  • 4 green onions, thinly sliced
  • 1 tablespoon sesame seeds, toasted

Instructions

  1. In a small bowl, mix together the miso paste, mirin, sake, and sugar to make the marinade.
  2. Spread the miso marinade on one side of each eggplant slice.
  3. Roll up the eggplant slices and secure them with toothpicks.
  4. Heat the vegetable oil in a pan over medium heat and grill the eggplant rolls until they are tender and slightly charred.
  5. Sprinkle with green onions and toasted sesame seeds before serving.
