Ingredients
- 2 large eggplants, thinly sliced lengthwise
- 1/4 cup white miso paste
- 2 tablespoons mirin
- 2 tablespoons sake
- 1 tablespoon sugar
- 1 tablespoon vegetable oil
- 4 green onions, thinly sliced
- 1 tablespoon sesame seeds, toasted
Instructions
- In a small bowl, mix together the miso paste, mirin, sake, and sugar to make the marinade.
- Spread the miso marinade on one side of each eggplant slice.
- Roll up the eggplant slices and secure them with toothpicks.
- Heat the vegetable oil in a pan over medium heat and grill the eggplant rolls until they are tender and slightly charred.
- Sprinkle with green onions and toasted sesame seeds before serving.
