Natto Jiru (ainu-style Fermented Soybean Stew)

Ingredients

  • 2 cups natto (fermented soybeans)
  • 4 cups dashi (Japanese soup stock)
  • 1/4 cup mirin (sweet rice wine)
  • 2 tablespoons soy sauce
  • 1/2 cup diced carrots
  • 1/2 cup diced potatoes
  • 1/2 cup sliced mushrooms
  • 2 green onions, sliced

Instructions

  1. In a pot, combine the dashi, mirin, and soy sauce and bring to a simmer.
  2. Add the carrots, potatoes, and mushrooms to the pot and cook for 15 minutes.
  3. Add the natto and green onions to the pot and cook for an additional 5 minutes.
  4. Remove from heat and serve hot.
