Nauruan Chicken Satay

Ingredients

  • 1 1/2 lbs chicken breast, cut into strips
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1/4 cup peanut butter
  • 1 tbsp lime juice
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine coconut milk, soy sauce, brown sugar, garlic, turmeric, coriander, cumin, cayenne pepper, peanut butter, and lime juice. Mix well to make the marinade.
  2. Add the chicken strips to the marinade, cover, and refrigerate for at least 2 hours, or overnight for best results.
  3. Thread the marinated chicken strips onto the soaked skewers.
  4. Heat a grill or grill pan over medium-high heat. Grill the chicken skewers for 3-4 minutes on each side, or until cooked through and slightly charred.
