Ingredients

  • 500g white fish fillets, such as snapper or cod
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup fish or vegetable stock
  • 1 cup heavy cream
  • 2 tbsp cornstarch
  • Salt and pepper to taste
  • 2 sheets of puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Cut the fish fillets into bite-sized pieces and set aside.
  3. In a large skillet, sauté the onion and garlic until softened.
  4. Add the fish stock, cream, and cornstarch to the skillet, stirring until the sauce thickens.
  5. Stir in the peas and fish pieces, then season with salt and pepper.
  6. Transfer the fish mixture to a baking dish.
  7. Roll out the puff pastry sheets and place them over the baking dish, trimming any excess pastry.
  8. Brush the pastry with the beaten egg for a golden finish.
  9. Bake for 30-40 minutes or until the pastry is golden and the filling is bubbling.
  10. Let the pie cool for a few minutes before serving.
