Ingredients
- 500g white fish fillets, such as snapper or cod
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 cup fish or vegetable stock
- 1 cup heavy cream
- 2 tbsp cornstarch
- Salt and pepper to taste
- 2 sheets of puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 200°C (400°F).
- Cut the fish fillets into bite-sized pieces and set aside.
- In a large skillet, sauté the onion and garlic until softened.
- Add the fish stock, cream, and cornstarch to the skillet, stirring until the sauce thickens.
- Stir in the peas and fish pieces, then season with salt and pepper.
- Transfer the fish mixture to a baking dish.
- Roll out the puff pastry sheets and place them over the baking dish, trimming any excess pastry.
- Brush the pastry with the beaten egg for a golden finish.
- Bake for 30-40 minutes or until the pastry is golden and the filling is bubbling.
- Let the pie cool for a few minutes before serving.
