Nauruan Seafood Paella

Ingredients
- 1 cup jasmine rice
- 1 onion, chopped

- 1 lb mussels, cleaned and debearded
- 1 lb squid, cleaned and sliced into rings
- 4 cups seafood or chicken broth
- 1 teaspoon saffron threads
- 1 teaspoon paprika
- 1 lemon, cut into wedges
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a paella pan or large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the red bell pepper, cherry tomatoes, and green peas. Cook for 5 minutes, stirring occasionally.
- Stir in the jasmine rice, saffron threads, and paprika. Cook for 2 minutes to toast the rice and spices.
- Pour in the seafood or chicken broth and bring to a simmer. Arrange the prawns, mussels, and squid on top of the rice mixture.
