Nauruan Sweet Potato Curry

Ingredients

  • 2 large sweet potatoes, peeled and cubed

  • 1-inch piece of ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cayenne pepper (optional for heat)
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté for 2-3 minutes until the onions are soft and translucent.
  2. Add the curry powder, turmeric, cumin, coriander, and cayenne pepper to the pot. Stir well to coat the onions and spices, allowing them to toast for 1-2 minutes.
