Nauruan Vegetable Stir-fry

Ingredients
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 2 carrots, julienned
- 1 cup broccoli florets
- 1 cup snap peas
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, grated
- 1 teaspoon cornstarch
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the onion and garlic, and stir-fry for 2 minutes.
- Add the bell pepper, carrots, broccoli, and snap peas. Stir-fry for an additional 5-7 minutes, or until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, sesame oil, ginger, and cornstarch. Pour the sauce over the vegetables and toss to coat evenly.
- Cook for another 2-3 minutes, or until the sauce has thickened and the vegetables are well coated.
- Season with salt and pepper to taste.
- Remove from heat and serve the Nauruan Vegetable Stir-Fry hot.
