Nauruan Vegetable Stir-fry

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 carrots, julienned
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • 1 teaspoon cornstarch
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the onion and garlic, and stir-fry for 2 minutes.
  3. Add the bell pepper, carrots, broccoli, and snap peas. Stir-fry for an additional 5-7 minutes, or until the vegetables are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, sesame oil, ginger, and cornstarch. Pour the sauce over the vegetables and toss to coat evenly.
  5. Cook for another 2-3 minutes, or until the sauce has thickened and the vegetables are well coated.
  6. Season with salt and pepper to taste.
  7. Remove from heat and serve the Nauruan Vegetable Stir-Fry hot.
