Nawabi Chicken Biryani is a classic dish from the Mughlai cuisine, known for its rich and aromatic flavors. This royal dish is a perfect blend of marinated chicken, fragrant basmati rice, and a medley of spices, creating a truly indulgent experience.

Nawabi Chicken Biryani

Ingredients

  • 2 cups basmati rice, soaked for 30 minutes and drained
  • 1 kg chicken, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 4 green chilies, slit
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/2 cup ghee
  • 1/4 cup milk
  • 1/2 teaspoon saffron strands
  • 1/4 cup warm water
  • Whole spices: bay leaves, cloves, cardamom, cinnamon
  • Salt to taste

Instructions

  1. In a bowl, marinate the chicken with yogurt, half of the sliced onions, half of the chopped tomatoes, green chilies, half of the coriander leaves, half of the mint leaves, and salt. Let it marinate for 1 hour.
  2. In a large pot, heat ghee and add the remaining sliced onions. Sauté until golden brown.
  3. Add the marinated chicken and cook until the chicken is tender and the ghee separates.
  4. In a separate pot, boil water and add the soaked rice along with whole spices. Cook the rice until it is 70% done. Drain and keep aside.
  5. In a small bowl, soak saffron strands in warm milk and set aside.
  6. In a heavy-bottomed pan, layer the partially cooked rice over the chicken. Sprinkle the remaining chopped tomatoes, coriander leaves, and mint leaves. Drizzle the saffron milk on top.
  7. Cover the pan with a tight-fitting lid and cook on low heat for 20-25 minutes, allowing the flavors to meld together.
  8. Once done, gently fluff the biryani with a fork and serve hot.
