Nawabi Mutton Biryani

Ingredients

  • 500g mutton, cut into pieces
  • 2 cups basmati rice, soaked
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 4 green chilies, slit
  • 1/2 cup mint leaves
  • 1/2 cup coriander leaves
  • 1/4 cup ghee
  • 1/4 cup oil
  • Whole spices: bay leaf, cinnamon, cardamom, cloves
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp biryani masala
  • Saffron strands soaked in milk
  • Salt to taste

Instructions

  1. Marinate the mutton with yogurt, red chili powder, turmeric powder, biryani masala, and salt. Let it sit for 1 hour.
  2. Heat ghee and oil in a large pot. Add the whole spices and sliced onions. Saute until the onions are golden brown.
  3. Add the marinated mutton and cook until the meat is tender.
  4. In a separate pot, boil water and cook the soaked rice until it is 70% done. Drain the rice.
  5. Layer the partially cooked rice over the mutton, and top it with chopped tomatoes, green chilies, mint leaves, and coriander leaves.
  6. Drizzle saffron-infused milk over the rice. Cover and cook on low heat until the rice is fully done and the flavors are infused.
  7. Gently mix the biryani before serving to combine the layers.
