Nawabi Mutton Biryani
Nawabi Mutton Biryani is a classic dish from the Mughlai Cuisine, known for its rich and aromatic flavors. This royal dish is a perfect blend of succulent mutton pieces, fragrant basmati rice, and a medley of spices, creating a truly indulgent experience.
Ingredients
- 500g mutton, cut into pieces
- 2 cups basmati rice, soaked
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 4 green chilies, slit
- 1/2 cup mint leaves
- 1/2 cup coriander leaves
- 1/4 cup ghee
- 1/4 cup oil
- Whole spices: bay leaf, cinnamon, cardamom, cloves
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp biryani masala
- Saffron strands soaked in milk
- Salt to taste
Instructions
- Marinate the mutton with yogurt, red chili powder, turmeric powder, biryani masala, and salt. Let it sit for 1 hour.
- Heat ghee and oil in a large pot. Add the whole spices and sliced onions. Saute until the onions are golden brown.
- Add the marinated mutton and cook until the meat is tender.
- In a separate pot, boil water and cook the soaked rice until it is 70% done. Drain the rice.
- Layer the partially cooked rice over the mutton, and top it with chopped tomatoes, green chilies, mint leaves, and coriander leaves.
- Drizzle saffron-infused milk over the rice. Cover and cook on low heat until the rice is fully done and the flavors are infused.
- Gently mix the biryani before serving to combine the layers.
