Ingredients

  • 2 cups cassava, peeled and diced
  • 1 cup bambara nuts
  • 1 cup okra, sliced

  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the onions and garlic, and sauté until the onions are translucent.
  3. Add the diced cassava and bambara nuts to the pan, and cook for 10 minutes, stirring occasionally.
  4. Add the sliced okra, diced tomatoes, paprika, cumin, salt, and black pepper to the pan. Stir well to combine all the ingredients.
  5. Cover the pan and let the ndiwo simmer for 5 minutes, or until the vegetables are tender.
  6. Remove from heat and serve hot.
