Neapolitan-style Potato Croquettes (Crocchè Napoletane)

Ingredients

  • 2 lbs (900g) potatoes, peeled and cubed
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/4 cup (30g) chopped fresh parsley
  • 2 eggs, beaten
  • 1 cup (120g) breadcrumbs
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, then drain and mash them.
  2. Stir in the Parmesan cheese, parsley, salt, and pepper. Allow the mixture to cool.
  3. Shape the potato mixture into small croquettes, then dip each croquette into the beaten eggs and coat with breadcrumbs.
  4. Heat the vegetable oil in a large skillet over medium heat. Fry the croquettes until golden brown on all sides.
  5. Remove the croquettes from the oil and place them on a paper towel to drain excess oil.
  6. Serve the crocchè Napoletane hot and crispy.
