Ingredients
- 2 lbs (900g) potatoes, peeled and cubed
- 1/2 cup (50g) grated Parmesan cheese
- 1/4 cup (30g) chopped fresh parsley
- 2 eggs, beaten
- 1 cup (120g) breadcrumbs
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Boil the potatoes in a large pot of salted water until tender, then drain and mash them.
- Stir in the Parmesan cheese, parsley, salt, and pepper. Allow the mixture to cool.
- Shape the potato mixture into small croquettes, then dip each croquette into the beaten eggs and coat with breadcrumbs.
- Heat the vegetable oil in a large skillet over medium heat. Fry the croquettes until golden brown on all sides.
- Remove the croquettes from the oil and place them on a paper towel to drain excess oil.
- Serve the crocchè Napoletane hot and crispy.
