Ingredients

  • 1 cup rice flour
  • 1 cup freshly grated coconut
  • 2-3 green chilies
  • 1-inch ginger
  • Salt to taste
  • Water as needed
  • 1 cup basmati rice
  • 2 cups water
  • Salt to taste

Instructions

  1. In a blender, combine grated coconut, green chilies, ginger, and salt. Add water and blend to a smooth chutney consistency.
  2. In a mixing bowl, combine rice flour and salt. Gradually add water while whisking to form a thin batter.
  3. Heat a non-stick pan over medium heat. Pour a ladleful of batter and spread it in a circular motion to make a thin crepe. Cook for a minute and fold it in half.
  4. Rinse the basmati rice and cook it with water and salt in a rice cooker or on the stovetop until done.
