Ingredients

  • 1 cup rice flour
  • 1/2 cup freshly grated coconut
  • 1/2 cup jaggery, grated

  • 2 cups water
  • Oil for cooking

Instructions

  1. In a bowl, mix the rice flour and salt. Gradually add water to make a thin batter. Set aside.
  2. In another bowl, mix the grated coconut and jaggery to make the sweet filling.
  3. Heat a non-stick pan over medium heat and lightly grease it with oil.
  4. Pour a ladleful of the batter onto the pan and swirl it around to form a thin, lace-like crepe. Cook for a minute until the edges start to lift.
  5. Sprinkle some sweet coconut filling on one half of the dosa and fold it over to make a half-moon shape. Cook for another minute, then remove from the pan.
  6. Repeat with the remaining batter and filling.
