Nei Roast (ghee Roast)
Nei Roast, also known as Ghee Roast, is a popular dish from the Dakshina Karnataka Cuisine. It is a flavorful and aromatic dish that is perfect for breakfast or as a side dish.
Ingredients
- 2 cups of dosa rice
- 1/2 cup of urad dal
- 1/4 cup of ghee
- 1 teaspoon of cumin seeds
- 1 teaspoon of black peppercorns
- 1 teaspoon of fenugreek seeds
- 10-12 dried red chilies
- Salt to taste
Instructions
- Wash and soak the dosa rice and urad dal separately for 4-6 hours.
- Grind the rice and dal into a smooth batter and let it ferment overnight.
- Heat ghee in a pan and add cumin seeds, black peppercorns, fenugreek seeds, and dried red chilies. Sauté until fragrant.
- Add the batter to the pan and mix well. Cook until the batter turns golden brown and crispy.
- Serve hot with chutney or sambar.
