Nei Roast, also known as Ghee Roast, is a popular dish from the Dakshina Karnataka Cuisine. It is a flavorful and aromatic dish that is perfect for breakfast or as a side dish.

Ingredients

  • 2 cups of dosa rice
  • 1/2 cup of urad dal
  • 1/4 cup of ghee
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of black peppercorns
  • 1 teaspoon of fenugreek seeds
  • 10-12 dried red chilies
  • Salt to taste

Instructions

  1. Wash and soak the dosa rice and urad dal separately for 4-6 hours.
  2. Grind the rice and dal into a smooth batter and let it ferment overnight.
  3. Heat ghee in a pan and add cumin seeds, black peppercorns, fenugreek seeds, and dried red chilies. Sauté until fragrant.
  4. Add the batter to the pan and mix well. Cook until the batter turns golden brown and crispy.
  5. Serve hot with chutney or sambar.
