Nepali Chicken Chow Mein

Ingredients

  • 250g chicken breast, thinly sliced
  • 200g chow mein noodles
  • 1 onion, sliced
  • 1 bell pepper, julienned
  • 2 carrots, julienned
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/2 tsp turmeric
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/4 tsp chili powder
  • Salt to taste
  • 2 tbsp cooking oil

Instructions

  1. Boil the chow mein noodles according to package instructions, then drain and set aside.
  2. Heat oil in a pan and sauté garlic and ginger until fragrant.
  3. Add the sliced chicken and cook until it's no longer pink.
  4. Toss in the vegetables and stir-fry until they are tender-crisp.
  5. Season with soy sauce, oyster sauce, sesame oil, turmeric, cumin powder, coriander powder, chili powder, and salt.
  6. Add the cooked noodles to the pan and toss everything together until well combined.
  7. Transfer to a serving dish and serve hot.
