Net Pancakes, also known as Sarawakian Kuih Jala, are a traditional delicacy from the Sarawakian Cuisine. These delicate and lacy pancakes are a popular snack or dessert, and are often enjoyed with a cup of hot tea or coffee.

Net Pancakes (sarawakian Kuih Jala)

Ingredients

  • 1 cup rice flour
  • 1/2 cup coconut milk
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1 egg
  • 1 tablespoon sugar
  • Oil for greasing the pan

Instructions

  1. In a mixing bowl, combine the rice flour, coconut milk, water, salt, egg, and sugar. Mix until smooth.
  2. Heat a non-stick pan over medium heat and lightly grease it with oil.
  3. Pour a small amount of the batter into a traditional Kuih Jala mold or a squeeze bottle with a small hole.
  4. Quickly move the mold or bottle in a circular motion over the pan to create a lacy net pattern. Cook for about 1-2 minutes until the edges start to lift.
  5. Carefully remove the pancake from the pan and place it on a plate. Repeat with the remaining batter.
  6. Serve the Net Pancakes warm and enjoy!
