Net Pancakes (sarawakian Kuih Jala)
Net Pancakes, also known as Sarawakian Kuih Jala, are a traditional delicacy from the Sarawakian Cuisine. These delicate and lacy pancakes are a popular snack or dessert, and are often enjoyed with a cup of hot tea or coffee.
Ingredients
- 1 cup rice flour
- 1/2 cup coconut milk
- 1/4 cup water
- 1/4 teaspoon salt
- 1 egg
- 1 tablespoon sugar
- Oil for greasing the pan
Instructions
- In a mixing bowl, combine the rice flour, coconut milk, water, salt, egg, and sugar. Mix until smooth.
- Heat a non-stick pan over medium heat and lightly grease it with oil.
- Pour a small amount of the batter into a traditional Kuih Jala mold or a squeeze bottle with a small hole.
- Quickly move the mold or bottle in a circular motion over the pan to create a lacy net pattern. Cook for about 1-2 minutes until the edges start to lift.
- Carefully remove the pancake from the pan and place it on a plate. Repeat with the remaining batter.
- Serve the Net Pancakes warm and enjoy!
