Nevisian Coconut Tarts
Nevisian Coconut Tarts are a delightful dessert that hails from the beautiful Caribbean island of Nevis. These tarts are filled with a sweet and creamy coconut filling, encased in a buttery pastry crust. They are perfect for enjoying with a cup of tea or as a sweet treat after a meal.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup ice water
- 2 cups shredded coconut
- 1 cup sweetened condensed milk
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, combine the flour, sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Shape the dough into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 350°F (175°C).
- In a separate bowl, mix together the shredded coconut, sweetened condensed milk, and vanilla extract until well combined.
- Roll out the chilled dough on a floured surface and cut out circles to line a muffin tin. Press the dough into the bottom and sides of each muffin cup.
- Spoon the coconut filling into each pastry-lined cup, filling almost to the top.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and the coconut filling is set.
- Allow the tarts to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
