Nevisian Lobster Bisque

Ingredients

  • 2 lobster tails, shells removed and meat chopped
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 tablespoons tomato paste
  • 4 cups fish or seafood stock
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil and butter over medium heat.
  2. Add the onion, garlic, carrot, and celery. Sauté until the vegetables are softened.
  3. Stir in the tomato paste and cook for 2 minutes.
  4. Pour in the fish or seafood stock and bring to a simmer.
  5. Add the chopped lobster meat and simmer for 20-25 minutes.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Simmer for an additional 10 minutes, then remove from heat.
  8. Use an immersion blender to puree the soup until smooth.
  9. Return the pot to low heat and adjust the seasoning if needed.
  10. Serve the Nevisian Lobster Bisque hot, garnished with fresh parsley.
