Nevisian Lobster Bisque

Ingredients
- 2 lobster tails, shells removed and meat chopped
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 2 tablespoons tomato paste
- 4 cups fish or seafood stock
- 1 cup heavy cream
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil and butter over medium heat.
- Add the onion, garlic, carrot, and celery. Sauté until the vegetables are softened.
- Stir in the tomato paste and cook for 2 minutes.
- Pour in the fish or seafood stock and bring to a simmer.
- Add the chopped lobster meat and simmer for 20-25 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Simmer for an additional 10 minutes, then remove from heat.
- Use an immersion blender to puree the soup until smooth.
- Return the pot to low heat and adjust the seasoning if needed.
- Serve the Nevisian Lobster Bisque hot, garnished with fresh parsley.
