Nevisian Spicy Mango Chutney

Ingredients

  • 4 ripe mangoes, peeled and diced
  • 1 cup brown sugar
  • 1 cup white vinegar
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon mustard seeds
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt

Instructions

  1. In a large saucepan, combine the diced mangoes, brown sugar, white vinegar, onion, garlic, ginger, mustard seeds, red pepper flakes, and salt.
  2. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 30 minutes, stirring occasionally, until the chutney thickens.
  3. Remove the chutney from the heat and let it cool to room temperature before transferring to a sterilized jar.
  4. Store the chutney in the refrigerator for up to 2 weeks.
