New Mexico Tortilla

Ingredients

  • 4 large flour tortillas
  • 1 cup black beans
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced green chilies
  • 1/4 cup chopped cilantro
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, mix together the black beans, diced tomatoes, cheddar cheese, green chilies, cilantro, cumin, chili powder, salt, and pepper.
  3. Place a tortilla on a flat surface and spoon a quarter of the mixture onto one half of the tortilla.
  4. Fold the other half of the tortilla over the filling to create a half-moon shape.
  5. Repeat with the remaining tortillas and filling.
  6. Place the filled tortillas on a baking sheet and bake for 15-20 minutes, or until the cheese is melted and the tortillas are golden brown.
