Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8-ounce) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F.
  2. In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese, 1 1/4 cups sugar, and vanilla extract until smooth. Beat in the eggs one at a time, then stir in the sour cream. Pour the filling over the crust.
  4. Bake for 60 minutes in the preheated oven. Turn off the oven, and let the cheesecake cool in the oven with the door ajar for 1 hour.
  5. Chill in the refrigerator for at least 4 hours before serving.
