Neyyappam (Ghee-Fried Rice Pancakes)
Ghee-Fried Rice Pancakes, also known as Neyyappam, are a traditional sweet snack from the Kerala cuisine. These delicious pancakes are made with rice flour, jaggery, and flavored with ghee and cardamom, resulting in a delightful treat that is perfect for any time of the day.
Ingredients
- 1 cup rice flour
- 1/2 cup jaggery, grated
- 1/2 cup ripe banana, mashed
- 1/4 cup grated coconut
- 1/2 tsp cardamom powder
- 2 tbsp ghee (clarified butter)
- 1/4 tsp baking soda
- Water, as needed
Instructions
- In a mixing bowl, combine rice flour, grated jaggery, mashed banana, grated coconut, cardamom powder, and baking soda.
- Add water gradually and mix to form a smooth batter. The consistency should be similar to pancake batter.
- Heat a special neyyappam pan or a regular non-stick pan and grease the moulds with ghee.
- Pour a spoonful of the batter into each mould and drizzle ghee around the edges.
- Cook on low heat until the edges turn golden brown, then flip the pancakes and cook the other side until golden brown as well.
- Remove the neyyappam from the pan and place them on a paper towel to remove excess ghee.
- Repeat the process with the remaining batter.
- Serve the ghee-fried rice pancakes (neyyappam) warm and enjoy!
