Neyyappam (Ghee-Fried Rice Pancakes)

Ghee-Fried Rice Pancakes, also known as Neyyappam, are a traditional sweet snack from the Kerala cuisine. These delicious pancakes are made with rice flour, jaggery, and flavored with ghee and cardamom, resulting in a delightful treat that is perfect for any time of the day.

Neyyappam (Ghee-Fried Rice Pancakes)

Ingredients

  • 1 cup rice flour
  • 1/2 cup jaggery, grated
  • 1/2 cup ripe banana, mashed
  • 1/4 cup grated coconut
  • 1/2 tsp cardamom powder
  • 2 tbsp ghee (clarified butter)
  • 1/4 tsp baking soda
  • Water, as needed

Instructions

  1. In a mixing bowl, combine rice flour, grated jaggery, mashed banana, grated coconut, cardamom powder, and baking soda.
  2. Add water gradually and mix to form a smooth batter. The consistency should be similar to pancake batter.
  3. Heat a special neyyappam pan or a regular non-stick pan and grease the moulds with ghee.
  4. Pour a spoonful of the batter into each mould and drizzle ghee around the edges.
  5. Cook on low heat until the edges turn golden brown, then flip the pancakes and cook the other side until golden brown as well.
  6. Remove the neyyappam from the pan and place them on a paper towel to remove excess ghee.
  7. Repeat the process with the remaining batter.
  8. Serve the ghee-fried rice pancakes (neyyappam) warm and enjoy!
