Nhingi Bolognese (butternut Bolognese)
Nhingi Bolognese, also known as Butternut Bolognese, is a delicious and hearty dish from Zimbabwean cuisine. This vegetarian twist on the classic Bolognese sauce is made with butternut squash, creating a rich and flavorful sauce that pairs perfectly with pasta.
Ingredients
- 1 small butternut squash, peeled and diced
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 can (400g) chopped tomatoes
- 1 cup vegetable broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 300g spaghetti or pasta of choice
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the diced butternut squash to the pot and cook for 5 minutes, stirring occasionally.
- Pour in the chopped tomatoes and vegetable broth. Season with dried oregano, dried basil, salt, and pepper. Stir to combine.
- Reduce the heat to low, cover the pot, and let the sauce simmer for 30 minutes, or until the butternut squash is tender.
- While the sauce is simmering, cook the pasta according to the package instructions. Drain and set aside.
- Once the butternut squash is tender, use a potato masher or fork to mash it into the sauce, creating a thick and chunky texture.
- Serve the butternut bolognese over the cooked pasta, and sprinkle with grated Parmesan cheese.
