Nhingi Bolognese, also known as Butternut Bolognese, is a delicious and hearty dish from Zimbabwean cuisine. This vegetarian twist on the classic Bolognese sauce is made with butternut squash, creating a rich and flavorful sauce that pairs perfectly with pasta.

Ingredients

  • 1 small butternut squash, peeled and diced
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (400g) chopped tomatoes
  • 1 cup vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 300g spaghetti or pasta of choice
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the diced butternut squash to the pot and cook for 5 minutes, stirring occasionally.
  3. Pour in the chopped tomatoes and vegetable broth. Season with dried oregano, dried basil, salt, and pepper. Stir to combine.
  4. Reduce the heat to low, cover the pot, and let the sauce simmer for 30 minutes, or until the butternut squash is tender.
  5. While the sauce is simmering, cook the pasta according to the package instructions. Drain and set aside.
  6. Once the butternut squash is tender, use a potato masher or fork to mash it into the sauce, creating a thick and chunky texture.
  7. Serve the butternut bolognese over the cooked pasta, and sprinkle with grated Parmesan cheese.
