Nigerian Gbegiri Soup

Ingredients

  • 2 cups of peeled beans
  • 1 onion, chopped
  • 2-3 cups of water
  • Salt to taste
  • 2 tablespoons of palm oil
  • 1 teaspoon of ground crayfish
  • 1 scotch bonnet pepper, chopped

Instructions

  1. Place the peeled beans in a pot with the chopped onion and water. Cook until the beans are very soft.
  2. Blend the cooked beans and onion to a smooth paste.
  3. Transfer the bean paste to a clean pot, add water to achieve desired consistency, and season with salt.
  4. Simmer the bean paste for about 10 minutes, stirring occasionally.
  5. In a separate pan, heat the palm oil and sauté the ground crayfish and chopped pepper for a few minutes.
  6. Add the sautéed mixture to the simmering bean paste and stir well.
  7. Continue to simmer for another 10 minutes, stirring occasionally, until the soup thickens.
