Nigerian Gbegiri Soup

Ingredients
- 2 cups of peeled beans
- 1 onion, chopped
- 2-3 cups of water
- Salt to taste
- 2 tablespoons of palm oil
- 1 teaspoon of ground crayfish
- 1 scotch bonnet pepper, chopped
Instructions
- Place the peeled beans in a pot with the chopped onion and water. Cook until the beans are very soft.
- Blend the cooked beans and onion to a smooth paste.
- Transfer the bean paste to a clean pot, add water to achieve desired consistency, and season with salt.
- Simmer the bean paste for about 10 minutes, stirring occasionally.
- In a separate pan, heat the palm oil and sauté the ground crayfish and chopped pepper for a few minutes.
- Add the sautéed mixture to the simmering bean paste and stir well.
- Continue to simmer for another 10 minutes, stirring occasionally, until the soup thickens.
