Nigerian Jollof Paella

Ingredients

  • 2 cups of parboiled rice
  • 1 pound of chicken, cut into pieces
  • 1 cup of diced bell peppers
  • 1 cup of diced onions
  • 3 tomatoes, chopped
  • 1/4 cup of vegetable oil
  • 2 cups of chicken broth
  • 1 teaspoon of thyme
  • 1 teaspoon of curry powder
  • 1 teaspoon of paprika
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • 1 cup of cooked shrimp
  • 1/2 cup of green peas

Instructions

  1. Heat the vegetable oil in a large paella pan over medium heat.
  2. Add the chicken pieces and cook until browned on all sides.
  3. Stir in the onions, bell peppers, and tomatoes, and cook for 5 minutes.
  4. Add the rice, thyme, curry powder, paprika, garlic powder, salt, and pepper. Stir to combine.
  5. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.
  6. Stir in the cooked shrimp and green peas, and cook for an additional 5 minutes.
  7. Remove from heat and let it rest for 5 minutes before serving.
