Nigerian Jollof Paella

Ingredients
- 2 cups of parboiled rice
- 1 pound of chicken, cut into pieces
- 1 cup of diced bell peppers
- 1 cup of diced onions
- 3 tomatoes, chopped
- 1/4 cup of vegetable oil
- 2 cups of chicken broth
- 1 teaspoon of thyme
- 1 teaspoon of curry powder

Instructions
- Heat the vegetable oil in a large paella pan over medium heat.
- Add the chicken pieces and cook until browned on all sides.
- Stir in the onions, bell peppers, and tomatoes, and cook for 5 minutes.
- Add the rice, thyme, curry powder, paprika, garlic powder, salt, and pepper. Stir to combine.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes.
- Stir in the cooked shrimp and green peas, and cook for an additional 5 minutes.
- Remove from heat and let it rest for 5 minutes before serving.
