Ingredients
- 2 cups of black-eyed peas
- 1 onion, chopped
- 2 red bell peppers, diced

- 8 taco shells
- 1 cup of shredded lettuce

Instructions
- Soak the black-eyed peas in water for 2 hours, then peel off the skins.
