Nigerian Moi Moi Tacos

Ingredients

  • 2 cups of black-eyed peas
  • 1 onion, chopped
  • 2 red bell peppers, diced
  • 3 tablespoons of palm oil
  • 1 teaspoon of ground crayfish
  • 1 teaspoon of bouillon powder
  • 1 teaspoon of salt
  • 8 taco shells
  • 1 cup of shredded lettuce
  • 1 tomato, diced
  • 1/2 cup of shredded cheese

Instructions

  1. Soak the black-eyed peas in water for 2 hours, then peel off the skins.
  2. In a blender, combine the peeled black-eyed peas, chopped onion, diced red bell peppers, palm oil, ground crayfish, bouillon powder, and salt. Blend until smooth.
  3. Divide the moi moi mixture into 8 portions and spoon each portion into a taco shell.
  4. Place the filled taco shells on a steamer and steam for 30 minutes.
  5. Once steamed, top the moi moi tacos with shredded lettuce, diced tomato, and shredded cheese.
