Nigerian Sushi Burritos

Ingredients

  • 4 nori seaweed sheets
  • 2 cups cooked sushi rice
  • 1 cup jollof rice
  • 1 cup suya-spiced grilled chicken, sliced
  • 1/2 cup diced plantains, fried
  • 1/2 cup shredded cabbage
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced avocado
  • 1/4 cup spicy mayo

Instructions

  1. Place a nori seaweed sheet on a bamboo sushi mat.
  2. Spread a layer of sushi rice over the nori sheet, leaving a border at the top.
  3. Layer jollof rice, grilled chicken, fried plantains, shredded cabbage, diced tomatoes, sliced avocado, and spicy mayo in the center of the rice.
  4. Roll the nori sheet tightly around the filling to form a burrito shape.
  5. Slice the burrito into smaller pieces using a sharp knife.
  6. Repeat with the remaining ingredients to make more burritos.
