Nile River Fish and Lentil Curry (كاري سمك النيل والعدس)

Ingredients
- 1 lb Nile River fish fillets, cut into chunks
- 1 cup dried brown lentils
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 2 cups vegetable broth
- 1/2 cup coconut milk
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, curry powder, cumin, coriander, turmeric, and cayenne pepper. Stir and cook for 1-2 minutes until fragrant.
- Add the diced tomatoes with their juices, vegetable broth, and dried lentils. Bring to a simmer and cook for 20 minutes, or until the lentils are tender.
- Add the coconut milk and fish chunks to the pot. Simmer gently for 10-15 minutes, or until the fish is cooked through.
- Season with salt and pepper to taste. Serve the curry over cooked rice, garnished with chopped cilantro.
