Nile River Fish Curry (كاري سمك النيل)

Ingredients
- 1 lb Nile River fish fillets
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1 cup coconut milk
- 1 cup fish or vegetable broth
- 2 tomatoes, diced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and minced garlic, and sauté until softened.
- Stir in the ground cumin, coriander, turmeric, paprika, and cayenne pepper, and cook for 1-2 minutes until fragrant.
- Add the coconut milk, fish or vegetable broth, and diced tomatoes. Bring to a simmer.
- Gently place the fish fillets into the simmering curry sauce, and let them cook for 8-10 minutes until they are cooked through.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
