Nile River Fish Curry (كاري سمك النيل)

Ingredients

  • 1 lb Nile River fish fillets
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 cup coconut milk
  • 1 cup fish or vegetable broth
  • 2 tomatoes, diced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Stir in the ground cumin, coriander, turmeric, paprika, and cayenne pepper, and cook for 1-2 minutes until fragrant.
  4. Add the coconut milk, fish or vegetable broth, and diced tomatoes. Bring to a simmer.
  5. Gently place the fish fillets into the simmering curry sauce, and let them cook for 8-10 minutes until they are cooked through.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro before serving.
