Nile River Fish Tagine (طاجن سمك النيل)

Ingredients

  • 1 kg Nile River fish, cleaned and cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 4 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 1/2 cup water

Instructions

  1. Season the fish pieces with salt, pepper, and half of the minced garlic.
  2. In a tagine or large skillet, heat the olive oil over medium heat. Add the chopped onions and remaining garlic, and sauté until softened.
  3. Add the diced tomatoes, ground cumin, coriander, paprika, turmeric, and cayenne pepper. Cook for a few minutes until the tomatoes start to break down.
  4. Place the seasoned fish pieces on top of the tomato mixture. Add the water and arrange the lemon slices on top.
  5. Cover and simmer for 20-25 minutes, or until the fish is cooked through.
  6. Sprinkle the chopped cilantro and parsley over the fish before serving.
