Nimbu Achar (zesty Lemon Pickle)

Ingredients

  • 10 lemons, washed and dried
  • 1/4 cup salt
  • 2 tbsp mustard seeds
  • 1 tbsp fenugreek seeds
  • 1/2 cup red chili powder
  • 1/4 cup mustard oil
  • 1 tsp asafoetida (hing)
  • 1/4 tsp turmeric powder

Instructions

  1. Cut the lemons into small pieces and remove the seeds.
  2. In a bowl, mix the lemon pieces with salt and set aside for 4-5 hours.
  3. Dry roast the mustard seeds and fenugreek seeds until fragrant, then grind them into a coarse powder.
  4. In a separate bowl, combine the ground mustard and fenugreek seeds with red chili powder, mustard oil, asafoetida, and turmeric powder.
  5. Add the lemon pieces to the spice mixture and mix well.
  6. Transfer the pickle to a clean, dry glass jar and let it sit in a sunny spot for 3-4 days, shaking the jar once a day.
