Ingredients
- 10 lemons, washed and dried
- 1/4 cup salt
- 2 tbsp mustard seeds
- 1 tbsp fenugreek seeds
- 1/2 cup red chili powder
- 1/4 cup mustard oil
- 1 tsp asafoetida (hing)
- 1/4 tsp turmeric powder
Instructions
- Cut the lemons into small pieces and remove the seeds.
- In a bowl, mix the lemon pieces with salt and set aside for 4-5 hours.
- Dry roast the mustard seeds and fenugreek seeds until fragrant, then grind them into a coarse powder.
- In a separate bowl, combine the ground mustard and fenugreek seeds with red chili powder, mustard oil, asafoetida, and turmeric powder.
- Add the lemon pieces to the spice mixture and mix well.
- Transfer the pickle to a clean, dry glass jar and let it sit in a sunny spot for 3-4 days, shaking the jar once a day.
