Nimbu Chawal (zesty Lemon Rice)

Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 1/4 cup lemon juice
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 green chilies, slit lengthwise
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Wash the rice and cook it in 4 cups of water until done. Fluff the rice with a fork and set aside.
  2. In a pan, heat the vegetable oil over medium heat. Add the mustard seeds and cumin seeds. Once they start to splutter, add the green chilies and sauté for a minute.
  3. Add the turmeric powder and mix well. Then, add the cooked rice, lemon juice, and salt. Mix gently to combine all the ingredients.
  4. Garnish with fresh coriander leaves and serve hot.
