Nimbu Chawal (zesty Lemon Rice)

Ingredients
- 2 cups basmati rice
- 4 cups water
- 1/4 cup lemon juice
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2 green chilies, slit lengthwise
- 1/2 teaspoon turmeric powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Wash the rice and cook it in 4 cups of water until done. Fluff the rice with a fork and set aside.
- In a pan, heat the vegetable oil over medium heat. Add the mustard seeds and cumin seeds. Once they start to splutter, add the green chilies and sauté for a minute.
- Add the turmeric powder and mix well. Then, add the cooked rice, lemon juice, and salt. Mix gently to combine all the ingredients.
- Garnish with fresh coriander leaves and serve hot.
