Ning Meng Ji (lemon Chicken)

Ingredients
- 500g boneless chicken, cut into cubes
- 2 lemons, juiced and zested
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons oil
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 green chili, sliced (optional)
- 1/2 cup chicken broth
- 2 green onions, chopped
Instructions
- In a bowl, mix the chicken with soy sauce, cornstarch, sugar, salt, and black pepper. Let it marinate for 10 minutes.
- Heat oil in a pan over medium-high heat. Add the marinated chicken and cook until browned and cooked through.
- Remove the chicken from the pan and set aside. In the same pan, add garlic, ginger, and green chili. Cook for 1-2 minutes.
- Stir in the chicken broth, lemon juice, and lemon zest. Bring to a simmer.
- Return the cooked chicken to the pan and toss to coat in the lemon sauce. Cook for an additional 2-3 minutes.
- Garnish with chopped green onions and serve hot.
