Ingredients

  • 500g boneless chicken, cut into cubes
  • 2 lemons, juiced and zested
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 green chili, sliced (optional)
  • 1/2 cup chicken broth
  • 2 green onions, chopped

Instructions

  1. In a bowl, mix the chicken with soy sauce, cornstarch, sugar, salt, and black pepper. Let it marinate for 10 minutes.
  2. Heat oil in a pan over medium-high heat. Add the marinated chicken and cook until browned and cooked through.
  3. Remove the chicken from the pan and set aside. In the same pan, add garlic, ginger, and green chili. Cook for 1-2 minutes.
  4. Stir in the chicken broth, lemon juice, and lemon zest. Bring to a simmer.
  5. Return the cooked chicken to the pan and toss to coat in the lemon sauce. Cook for an additional 2-3 minutes.
  6. Garnish with chopped green onions and serve hot.
