Ingredients

  • 2 cups cooked chickpeas
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 cup chopped walnuts
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until softened.
  2. Add the ground cumin and coriander, and cook for another minute to toast the spices.
  3. Stir in the cooked chickpeas, chopped walnuts, and vegetable broth. Bring to a simmer and cook for 45 minutes.
  4. Season with salt and pepper to taste.
  5. Serve the Nishallo hot, garnished with additional chopped walnuts if desired.
