Ingredients
- 1 kg pork loin, cut into cubes
- 2 cups chopped Njama Njama leaves (or substitute with spinach)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt to taste
- 2 tablespoons vegetable oil
- 1 cup chicken broth
- 2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine the pork cubes, onion, garlic, ginger, paprika, cayenne pepper, and salt. Toss to coat the pork evenly.
- Thread the marinated pork cubes onto skewers and grill for 10-12 minutes, turning occasionally, until the pork is cooked through and slightly charred.
- In a separate pan, heat the vegetable oil over medium heat. Add the Njama Njama leaves and sauté for 3-4 minutes until wilted.
- Stir in the chicken broth, tomato paste, soy sauce, and honey. Simmer for 5 minutes.
- In a small bowl, mix the cornstarch with water to create a slurry. Stir the slurry into the sauce to thicken it.
- Serve the grilled pork skewers with the spicy Njama Njama sauce on the side.
