Ingredients

  • 1 kg pork loin, cut into cubes
  • 2 cups chopped Njama Njama leaves (or substitute with spinach)
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the pork cubes, onion, garlic, ginger, paprika, cayenne pepper, and salt. Toss to coat the pork evenly.
  3. Thread the marinated pork cubes onto skewers and grill for 10-12 minutes, turning occasionally, until the pork is cooked through and slightly charred.
  4. In a separate pan, heat the vegetable oil over medium heat. Add the Njama Njama leaves and sauté for 3-4 minutes until wilted.
  5. Stir in the chicken broth, tomato paste, soy sauce, and honey. Simmer for 5 minutes.
  6. In a small bowl, mix the cornstarch with water to create a slurry. Stir the slurry into the sauce to thicken it.
  7. Serve the grilled pork skewers with the spicy Njama Njama sauce on the side.
