Ingredients
- 1.5 lbs pork loin, cut into 1-inch cubes
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ginger, grated
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 cup tomato paste
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, combine the pork cubes, onion, garlic, ginger, paprika, cayenne pepper, salt, and pepper. Mix well to coat the pork evenly. Cover and refrigerate for at least 1 hour.
- Preheat the grill to medium-high heat. Thread the marinated pork cubes onto skewers.
- Grill the pork skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and has grill marks.
- While the pork is grilling, prepare the spicy tomato sauce. In a saucepan, heat the vegetable oil over medium heat. Add the tomato paste and cook for 2-3 minutes, stirring constantly.
- Add the chopped onion, garlic, ginger, paprika, and cayenne pepper to the saucepan. Cook for an additional 5 minutes, stirring frequently, until the sauce thickens.
