Ingredients

  • 1.5 lbs pork loin, cut into 1-inch cubes
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 cup tomato paste
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the pork cubes, onion, garlic, ginger, paprika, cayenne pepper, salt, and pepper. Mix well to coat the pork evenly. Cover and refrigerate for at least 1 hour.
  2. Preheat the grill to medium-high heat. Thread the marinated pork cubes onto skewers.
  3. Grill the pork skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and has grill marks.
  4. While the pork is grilling, prepare the spicy tomato sauce. In a saucepan, heat the vegetable oil over medium heat. Add the tomato paste and cook for 2-3 minutes, stirring constantly.
