Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup groundnut paste (peanut butter)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 bell peppers, chopped
  • 2 cups chicken broth
  • 1 cup water
  • 1/2 cup palm oil
  • 1 tsp ground crayfish
  • 1 tsp ground chili powder
  • Salt and pepper to taste

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. In a large pot, heat the palm oil over medium heat.
  3. Add the seasoned chicken pieces and brown on all sides.
  4. Remove the chicken from the pot and set aside.
  5. In the same pot, sauté the onions, tomatoes, and bell peppers until softened.
  6. Stir in the groundnut paste, chicken broth, water, ground crayfish, and chili powder.
  7. Return the chicken to the pot and bring the soup to a simmer.
  8. Cover and cook for 45-50 minutes, or until the chicken is tender.
  9. Adjust seasoning with salt and pepper as needed.
  10. Serve the Nkate Nkwan hot with your choice of side dish.
