Ingredients
- 1 whole chicken, cut into pieces
- 1 cup groundnut paste (peanut butter)
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 bell peppers, chopped
- 2 cups chicken broth
- 1 cup water
- 1/2 cup palm oil
- 1 tsp ground crayfish
- 1 tsp ground chili powder
- Salt and pepper to taste
Instructions
- Season the chicken pieces with salt and pepper.
- In a large pot, heat the palm oil over medium heat.
- Add the seasoned chicken pieces and brown on all sides.
- Remove the chicken from the pot and set aside.
- In the same pot, sauté the onions, tomatoes, and bell peppers until softened.
- Stir in the groundnut paste, chicken broth, water, ground crayfish, and chili powder.
- Return the chicken to the pot and bring the soup to a simmer.
- Cover and cook for 45-50 minutes, or until the chicken is tender.
- Adjust seasoning with salt and pepper as needed.
- Serve the Nkate Nkwan hot with your choice of side dish.
