Nkui Nkui Beef (cameroonian Style Beef Stew)

Ingredients
- 2 lbs beef, cut into cubes
- 2 onions, chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp tomato paste
- 2 tbsp peanut butter
- 2 cups beef broth
- 2 tbsp vegetable oil
- 1 tsp paprika
- 1 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the beef cubes and brown on all sides.
- Stir in the tomato paste, peanut butter, paprika, and cayenne pepper.
- Pour in the beef broth and add the diced tomatoes. Season with salt and pepper.
- Cover and simmer for 2 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
- Serve the Nkui Nkui Beef hot with rice or fufu.
