Nkui Nkui Beef (cameroonian Style Beef Stew)

Ingredients

  • 2 lbs beef, cut into cubes
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp tomato paste
  • 2 tbsp peanut butter
  • 2 cups beef broth
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the tomato paste, peanut butter, paprika, and cayenne pepper.
  5. Pour in the beef broth and add the diced tomatoes. Season with salt and pepper.
  6. Cover and simmer for 2 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
  7. Serve the Nkui Nkui Beef hot with rice or fufu.
